Recipe vs Reality: Lemon Quinoa Cilantro Chickpea Salad

So I came across this mouthwatering food porn the other day and figured, what a perfect opportunity to do another installment of Recipe vs Reality. It’s been too long, anyway!

As you can see in the photo, this dish has quite a few amazing ingredients: avocado, protein-rich quinoa and chickpeas, delicious tomatoes and dark leafy greens. It’s so healthy, in fact, that you’d have to eat at least one cupcake for dessert, to offset the over-vitamination your body would otherwise have to endure.

So be careful.

Anyway, here’s the full ingredient list, from the Diva Dish:

Lemon Quinoa Cilantro Chickpea salad
1/2 C. dry quinoa
2 C. vegetable broth
1 can garbanzo beans (drained and rinsed)
1 c. cherry tomatoes cut in half
2 avocados diced
2 C. spinach – I didn’t have any, so I used about 1 cup of kale
1 bunch cilantro
1/4 C. onion
2 small cloves garlic

For the dressing:
Juice of 2 lemons
zest of 1 lemon
2 tsp. dijon mustard
2 tsp. olive oil – used 1 tsp hemp oil instead
1 tsp. agave nectar
1/2 tsp. cumin
dash of salt and pepper

I followed the directions almost precisely, except instead of 1/4 cup onion, I diced 1/4 onion. That may have been too much. (Not that anyone in the family complained? But I did stay away from people for a hew hours afterwards.)

So how did it turn out? It was delicious — and kind of photogenic:Tasted like guacamole and hummus mixed with quinoa, which when you think of it, is kind of what it was, but without the mashing and blending.

Next time I make it, though, I’ll skip the agave nectar and use less lemon juice, as well as only one to 1.5 cups of vegetable broth for the quinoa instead of 2 cups. That’ll hopefully make the salad a bit drier — or, at least, less soggy-looking?So there you have it. Meanwhile, on the road…
I set out on a quick 4.5-mile run after work, but not even three miles in managed to twist my ankle and graciously (NOT) drop and roll. Right there on the straight, flat, even asphalt, with nary a li’l bump in sight. How I managed to roll that ankle, I don’t know. Actually, I do: it’s all thanks to my amazing gazelle-like grace, athleticism and razor-sharp focus.

As a matter of fact, I was actually thinking about running in the dark (next week, at Ragnar), and how I’d have to be really careful not to twist my ankle or trip and fall. You think it, it happens. Just so you know.

So anyway, as I limped along the road and waiting for HusbandRuns to pick me up for the Drive of Shame back home, I put together this lovely visual:Just a wee little bit of blood, but a lot of swelling… well, hopefully nothing a week’s worth of rest and some Rock Tape won’t be able to fix for Ragnar?
